How do I change the speed on the iPad version. Some of the rhythm tests are impossible at the set speed.

Hi,
You can do that in the Exercise Options at the top right of the screen: Tap on the list-shaped icon, and you will see a list of all the options available for the current exercise. This applies to all exercises in the app.
